Roasting turkey is very easy and delicious! All you do is rub the turkey with the herbs, pop it in the oven and dinner is ready in about an hour. You can roast a whole turkey breast for dinner and use the leftovers for sandwiches and snacks all week. It is a healthier, better tasting and a more economical alternative than going to the deli.
Ingredients:
- 1 (3 lb.) bone in turkey breast, skin removed
- 1 Tbs. olive oil 2 garlic cloves, crushed
- 1tsp. finely chopped fresh sage
- 1 tsp. finely chopped fresh thyme
- 1 tsp. finely chopped fresh rosemary
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
Preheat the oven to 375. Rinse the turkey breast and pat dry. In a small bowl, combine the oil, garlic, herbs, salt and pepper and rub over the turkey breast. Transfer the turkey breast to a roasting pan and roast until the juices run clear when cut and a thermometer registers 165 (about 1 to 1 1/4 hours). Let rest, covered with aluminum foil, for 10 minutes before carving.
**Chefs note: if you can’t buy fresh herbs, you can substitute dried instead. Just use half of what you’d use fresh.
