Ingredients:
- No Calorie Cooking Spray
- 1 whole chicken, cut into 8 pieces
- 1 medium white onion, diced
- 1 clove minced garlic
- 1/4 cup chopped fresh parsley
- 2 Tbsp. chopped fresh cilantro
- Sea salt and pepper to taste
- 4 cups low-sodium chicken broth
- 2 lemons, thinly sliced
- 3 oz. ginger, peeled and thinly sliced
Directions:
1. In a large stockpot, spray cooking spray and bring to medium heat. Brown chicken for about 10 minutes.
2. Add onion, garlic, parsley, cilantro, and a pinch of salt and pepper. Sauté for 5 minutes until onion is translucent.
