Morning Scramble

Ingredients:

  • 2 eggs
  • 4 baby bella mushrooms 
  • 1/4 cup red bell peppers
  • 1/2 cup of spinach
  • 2 tablespoons coconut oil
  • 1 slice of deli ham
  • Salt and pepper to taste

Directions:

1. With a fork whisk the eggs in a small bowl 

2. Chop up your vegetables and ham into bite sized pieces

3. Toss ingredients into raw egg mixture

4. Coat frying pan with coconut oil 

5. Pour egg mixture into frying pan and scramble on low heat

6. Add salt and pepper to taste
