Pesto is most known as a great sauce for Italian pasta, but it also goes perfectly with chicken and fish for an authentic basil flavour!


1/4 cup pine nuts

3 cloves garlic

1 teaspoon salt

4 ounces fresh basil leaves, about 3 packed cups 

2/3 cup extra virgin olive oil

1 cup freshly grated Parmesan cheese


Toast the pine nuts in a skillet over medium heat until lightly browned, 5 to 6 minutes.

Put the toasted nuts, garlic, and the salt into a food processor and process until everything is finely chopped. Add the basil and continue processing until the basil is also finely chopped.

Keep the processor running slowly and drizzle in the olive oil. Process until everything is smooth.

Add the Parmesan cheese, pulsing just until the cheese is mixed in.
