6 oz. skinless boneless haddock fillet
6 large asparagus spears
1/2 tsp garlic minced
1 tbsp mixed fresh herbs, chopped (dill, parsley, thyme)
2 tbsp fresh squeezed lemon juice
Salt and pepper to taste
Preheat oven to 400 F. Wash the asparagus and cut off the tough woody ends. Place the fish fillet in the center of a large piece of foil and arrange asparagus spears in a single layer alongside the fish. Sprinkle with salt and pepper, garlic and the mixture of fresh herbs and drizzle with lemon. Wrap up in foil, making sure that it is well sealed and add one more sheet if necessary. Place the package in a baking dish and cook in the oven for about 20 minutes. Use a toothpick, while cooking to check if everything is tender and soft. Serve warm.
